How to make the perfect ice-cream sundae

Making the perfect Ice Cream Sundae by Tim Laine of The Chilly Wizard at the Saxon Square Shopping Centre, Christchurch.

What you need
1.    The imagination, skills and flair to make the ultimate dessert.
2.    The ingredients: Ice Cream (of course), sauces, fresh fruit, toppings, whipped cream and decorations.
3.    The equipment: A glass or dish, scoop or spoon and most important a bib (especially for the big kid).

The glass
•    Choose a glass that will be big enough or even a large fruit bowl for a free for all party sundae. 
•    Chill the dish/glass in the freezer beforehand – this will stop the ice cream from melting too quickly.

The Sundae
•    Drizzle some real fruit sauce in the bottom of the glass. Only a small amount as this
is the last bit you eat and too much can be too sweet, spoiling the ice cream and fruit flavours.
•    Warm the ice cream scoop first but be sure to tap off the excess water to avoid having lumps of ice in your sundae.
•    Scoop the ice cream into the glass trying not to brush it against the side.
•    Work to 1.5 scoops of ice cream per person.
•    Choose your ice cream flavours and sauces carefully so that you do not have conflicting and overpowering flavours.
•    Fresh fruit sundaes are great - they are less filling, and are slightly healthier than those laden with chocolate.  Be careful with bananas. Even though they don’t appear to have a strong flavour, they can often over power all the others. When adding bananas make sure to only use freshly chopped ones.
•    Layer your ice creams, fruit and sauces in the glass.

•    A top tip is to place the fruit against the side of the glass so your guests can see them in the sundae as you present them to table.

The toppings
•    Next add some fresh whipped cream. Whipped cream makes a sundae but be careful not to go overboard!
•    Now come the toppings or sprinkles.  You really can use anything: nuts, chopped fudge, crumbled biscuit, sweets, shaved chocolate, crushed maltesers, coco pops, 100’s & 1000’s or marshmallows.

Finishing touches
•    Lastly, put some fresh fruit on top: a strawberry, cherry or raspberry.  To make the sundae look really spectacular take a slice of melon, watermelon orpineapple and make a slit between the rind and the flesh to hook them onto the side of the glass. A slice of orange also looks great.
•    Add a decoration.  This could be a flag, wafer biscuit, or even a sparkler or candle.  Obviously take care if adding a sparkler to a child’s sundae.
•    The spoon. If you are using a traditional sundae glass, you need the traditional sundae spoon – really long so you can reach down to the very bottom of your glass.

Ideas for sundaes are limitless so have a go! They will only get better the more you try.
